Service Description
Unlike many other Indian spice mixes, these seeds are left completely whole rather than ground into a powder. They are typically bloomed in hot oil or ghee to release their aromatic oils at the beginning of cooking.
The 5 Traditional Ingredients
The blend generally consists of equal parts of the following whole seeds:
Cumin Seeds (Jeera): Brings an earthy, warming backbone.
Fennel Seeds (Saunf / Mouri): Offers a sweet, refreshing, anise-like
flavor.Fenugreek Seeds (Methi): Provides a deeply complex, slightly bitter undertone.
Nigella Seeds (Kalonji / Kalo Jeere): Adds a sharp, peppery, and onion-like complexity.
Black Mustard Seeds (Rai / Shorshe): Contributes a pungent, nutty kick. (Note: In highly traditional Bengali kitchens, wild celery seeds, known as Radhuni, are often preferred over mustard seeds).
